Description
Egusi soup is one of the most popular and widely enjoyed dishes in Nigeria. It is made from ground melon seeds (egusi), which give the soup its thick, creamy consistency and distinctive nutty taste. The soup is typically cooked with palm oil, blended peppers, onions, and a mix of seasonings that create a rich, savory base.
A variety of proteins are often added, including beef, goat meat, chicken, stockfish, dried fish, and sometimes seafood. Leafy vegetables such as bitter leaf, spinach, or ugu (fluted pumpkin leaves) are incorporated, adding freshness and balance to the richness of the soup.
