Description
White soup, also known as Ofe Nsala, is a traditional Nigerian dish popular among the Igbo people of eastern Nigeria. Unlike many Nigerian soups, it does not use palm oil, which gives it its characteristic pale or “white” appearance. The soup is typically prepared using assorted meats such as chicken, goat meat, or fish (especially catfish), combined with stockfish and dried fish for a deep, rich flavor.
The soup is thickened using pounded yam or cocoyam paste, which creates a smooth, slightly stretchy consistency. It is seasoned with ingredients like uziza seeds, utazi leaves, crayfish, pepper, and seasoning cubes, giving it a mildly spicy and aromatic taste.
